Kitchen Manager Wanted at the Swedish Prison and Probation Service
The Swedish Prison and Probation Service is expanding – we are building new facilities, renovating, and adding on, and we are now looking for more employees. Our primary goal is to reduce recidivism – to break the vicious cycle. If we succeed, society will be safer and more secure for everyone. We are the authority responsible for prisons, probation, remand facilities, and client transport.
The Gävle operational area includes the closed prison Gävle, the open prison Gruvberget, and the remand facility Bomhus. Our operations run around the clock, and the largest professional group is prison officers, supported by over ten other positions to ensure our mission. At the prisons Gävle and Gruvberget, inmates are engaged in education, other structured activities, treatment programs, self-management, or in work operations primarily consisting of carpentry production. You can easily reach Gävle prison and Bomhus remand facility by public transport, while access to a car is required for Gruvberget prison. Staff parking is available.
JOB RESPONSIBILITIES
As the kitchen manager, your main responsibilities will be to lead the daily operations in the production kitchen and to drive the business forward based on given frameworks and guidelines within your area of responsibility. In this role, you will create menus and be responsible for purchasing food and supplies. You will collaborate significantly with staff in other functions. Your work will also include organizing and planning kitchen operations, creating clear routines and structure for both the chefs and the clients. Administrative tasks will fill part of your day, while the rest of the time you will be part of the production.
The food in the kitchen is prepared from scratch for the clients in the prison and remand facility, as well as for serving in the staff cafeteria, and you will share responsibility for ensuring that portion prices are within budget. Part of the daily work may involve mentoring clients in employment.
The team consists of 5 chefs, including you as the kitchen manager. The tasks are all common in a large kitchen, such as planning, purchasing, and preparing lunch and dinner. The tasks also include cleaning the kitchen premises, dishwashing, delivering food to other facilities, and self-control in accordance with applicable legislation. Preparation of dietary food and other special diets is also included.
QUALIFICATIONS
We are looking for someone who is secure, stable, and self-aware. You remain calm and controlled in stressful situations and collaborate well with others. You should have a strong ability to organize and structure your work, be able to see the big picture, and appreciate order and cleanliness. You have good judgment and take responsibility for your tasks.

We are looking for someone who has:
- Restaurant or large-scale kitchen education at the high school level, or other education combined with experience deemed relevant by the Swedish Prison and Probation Service
- Good knowledge of the Swedish language in both spoken and written form
- Experience working as a head chef or in a similar supervisory role in the kitchen
- Good computer skills
- Driver's license for a manual transmission vehicle
It is meritorious if you have:
- Experience working in a large kitchen
- Experience handling invoices, orders/purchases
- Good knowledge of HACCP food hygiene and self-control
- Good knowledge of special diets and allergens
